Eggplant Parm Towers

Finally!  You can cook like you live in the hood and eat like you live on the Northside.  Meet, eggplant parm done easily.
Serves two
Two baby eggplants (or one big eggplant)
1/4 c olive oil
1 c marinara sauce
1 c bread crumb
1/4 c parmesean
1/2 c mozzarella cheese
salt and pepper to taste
tomato slice (optional)
Preheat oven to 450 degrees.  Slice up eggplants.  Mix parmesan, bread crumbs, and salt and pepper.  Dip slices in olive oil and then bread crumbs.  Layer in greased pan with a spoonful of sauce in between.  Top tower with more sauce, mozzarella, and tomato slice.  Bake for 20 mins.

Low Fat (and easy) Strawberry Shortcake Cupcakes!

Who doesn't like a yummy cupcake that doesn't tip the scales?  Here's a great and easy recipe that would add extra bulge to your waistline. 

1 pkg Pillsbury strawberry cake mix
1/2 c unsweetened applesauce
4 egg whites
Fat free Redi-whip
Sprinkles

Mix cake mix with applesauce and egg whites until mixed.  Pour mix into 12 cupcake wrappers.  Bake at 350 degrees for 25 mins.  When done, and cooled, scoop out middles with a spoon.  When ready to serve, fill with fat free cream and sprinkles.  The inside will look like this:
