Chocolate Peanut Butter Crescent Muffins

1 can crescent roll
Peanut Butter
Chocolate Chips
Cupcake papers

Line a muffin pan with 8 papers.  Spread peanut butter and sprinkle chocolate chips on crescent rolls.  Roll up like muffins and place in papers.  Bake at 375 for 15 mins.

Diet Cherry 7-up Cake

Whhaaaatttt???  Yup, I said it.  Diet cherry 7-up cake.  Sounds weird but trust me, it's great.  Fluffiest cake you'll ever eat!

Ingredients
1 box cherry chip cake mix
1 12 oz can of Diet Cherry 7-up
Can of frosting

Step 1: Mix  7-up with cake mix like this

Put in cake pan.  Back at 350 for 25 mins.  Cool and frost.  We made a cherry on ours.  If too difficult, frost with choice of frosting.

Pizza Roll Ups!

I can't stop eating these they are so good! Easy snack or easy meal.  Love them!
Makes 8
Ingredients
1 can crescent rolls
1 cup Mozzarella cheese
1 cup marinara sauce
2 tablespoons olive oil
salt, pepper, garlic powder, basil to taste

Step 1: take crescent rolls, cheese, and sauce and do this with them:
Roll them up, top with oil and seasonings.  Bake at 375 for 15 mins.  Serve hot and enjoy!

3 Melba Toasts Rye
1 tablespoon peanut butter
1 tablespoon chocolate chips

Eggplant Parm Towers

Finally!  You can cook like you live in the hood and eat like you live on the Northside.  Meet, eggplant parm done easily.
Serves two
Two baby eggplants (or one big eggplant)
1/4 c olive oil
1 c marinara sauce
1 c bread crumb
1/4 c parmesean
1/2 c mozzarella cheese
salt and pepper to taste
tomato slice (optional)
Preheat oven to 450 degrees.  Slice up eggplants.  Mix parmesan, bread crumbs, and salt and pepper.  Dip slices in olive oil and then bread crumbs.  Layer in greased pan with a spoonful of sauce in between.  Top tower with more sauce, mozzarella, and tomato slice.  Bake for 20 mins.

Low Fat (and easy) Strawberry Shortcake Cupcakes!

Who doesn't like a yummy cupcake that doesn't tip the scales?  Here's a great and easy recipe that would add extra bulge to your waistline. 

1 pkg Pillsbury strawberry cake mix
1/2 c unsweetened applesauce
4 egg whites
Fat free Redi-whip
Sprinkles

Mix cake mix with applesauce and egg whites until mixed.  Pour mix into 12 cupcake wrappers.  Bake at 350 degrees for 25 mins.  When done, and cooled, scoop out middles with a spoon.  When ready to serve, fill with fat free cream and sprinkles.  The inside will look like this:
